Nose 

Classic Oaxacan espadin flavors of roasted agave are enhanced with sweet honey, red delicious apple, and white flowers. 

Taste

Spice forward with flavors of young green clover, serrano, and other grassy notes. The aroma of golden honey is heady and focused without any cloying sweetness. Delicious and impeccably balanced. 

Method/Background 

Pechuga style agave spirit with an espadin base, chillies and local honey. Designed as a tribute to the flavors of Oaxaca, and born out of a desire to support the local economy during the difficulties of the 2020 pandemic, Versus was crafted with seasonal ingredients from local vendors. The espadin mezcal is distilled with local ingredients in the second distillation. Available as a certified mezcal in Europe and as a destilado de agave in the USA.

Tess Rose Lampert is a wine and spirits educator with a focus on mezcal. She is a frequent contributor to Mezcalistas and has developed programming for Mexico in a Bottle and Spirited Conversations. She has an Advanced Degree from the Wine & Spirit Education Trust, Spanish Wine Educator Certificate, an MA from the University of East Anglia, UK, in Philosophy of Food and Drink and a BA from Bard College in NY.
