The uvalama opens with a slight raisiny note, just like a well extracted Zinfandel or Amarone and then reveals its Bacanora spirit with a full throated burst of sea spray and roasted agave fruit.
The liquid is slightly opaque, the color comes completely from the fruit infusion. There are no other additives and it didn’t sit in wood. The Bacanora soul of this bottle is indelibly present with rich agave sugar and nice alcohol balance. You want to say that you taste dried fruit because of the color but the flavor from the uvalama fruit is so integrated that it yields its own flavor sensation accented by a touch of tannin and a touch of plum.
This would be ideally drunk on its own before or after a meal but there are some pretty dramatic cocktail applications.
Method / Background Notes
Uvalama is a fruit tree endemic to the Bacanora area that produces small fruits the size of cherries that taste like plums. Each bottle comes with two uvalama fruits in it so you can see them, always a surprise, and taste them whenever the bottle runs out. Per co-founder Maier, the aesthetics are two fold because if you don’t add the fruit, the color won’t balance out. And, lest you harbor any associations with that old worm in the bottle, uvalama are more on the Luxardo cherry end of the spectrum.
