A little party of bubblegum and lychee fruit – straight out of the candy aisle in an Asian grocery but with that smooth burn from a 40% ABV mezcal.
Method / Background Notes
San Luis Potosi is rapidly making a name for itself in the mezcal world with an amazing spectrum of bottles like this one made from Salmiana. In this case the agaves are roasted underground, crushed by a tahona, fermented by wild yeasts in pine vats, and then twice distilled in a copper alembic.
