Rustic aromas of saddle leather, dried cranberry, and pineapple fronds are cozy and inviting. The aroma is reminiscent of winter spices, sweet and mellow, with a kick of piney brightness.
The flavors are intense, with green peppercorn, pineapple husk, and wet earth. A mineral rich core is bold and sturdy, highlighting the floral undertones that begin to bloom at the end of each sip. The flavor sticks to the palate, offering a long finish to savor the delicate notes.
Agaves are cooked in a traditional earthen oven before being crushed with a tahona. The mash is wild yeast fermented in wooden vats before being distilled twice in copper pot stills. The agaves used for this blend are all subvarieties of the karwinskii family.
