Nose
Aromas of red berries and freshly chopped pea shoots are a combination of floral, earthy, and fruity.
Taste
The flavors are well meshed, creating a cascade of citrus, berries, toasted coffee, and watermelon rind notes that somehow all make sense together. The texture is soft and silky, with subtle notes of chili spice that stay tingling on the tongue after each sip.
Method/Background
Agaves are cooked in an in-ground earthen oven, tahona crushed, naturally fermented in wooden tanks, and triple distilled in small copper pot stills- the third distillation mellows and melds the flavors of this pungent agave.
