Nose
The aromas are slightly caramelized and sweet, with a corn husk-like earthiness in the background.
Taste
The flavor has a touch of smoke and caramel, nicely framing the earthy and umami-rich flavor of the worm that permeates each sip. Notes of burnt orange, freshly split wood, and ginger are lightly spicy and nutty. Each element can be perceived one by one, while being enjoyed all meshed together.
Method/Background
Agaves are cooked in an in-ground earthen oven, tahona crushed, naturally fermented in wooden tanks, and double distilled in small copper pot stills. The mezcal is then aged in American Oak barrels along with the gusanos, or agave worms. This unique method is specific to Alberto.
