Nose

Taste
Soft and mild on the palate, the first flavors are earthy, with green pepper, lemon balm, and spring grass notes. The flavors turn citrusy with some roasted pineapple sweetness and a touch of dried peach, which offers a floral perfume. The finish is clean, with more herbal and dried lime zest tanginess.
Method/Background
Agaves are cooked in an in-ground earthen oven, tahona crushed, naturally fermented in wooden tanks, and double distilled in small copper pot stills. The three varieties of agave are processed entirely together, from cooking through to distillation.
