Nose
Bright and zesty, the gin-like aromas are full of botanicals like lavender, juniper, and mint.
Taste
The flavors land bold on the palate, with eucalyptus, juniper, spruce, lilies, orange peel, clove and cardamom. There is underlying orchard fruit sweetness as well as citrus, balancing the punchy botanicals. An interesting hybrid spirit that could easily upgrade classic gin cocktails.
Method/Background
Agaves are cooked in an in-ground earthen oven, tahona crushed, naturally fermented in wooden tanks, and double distilled in small copper pot stills. For this special edition, botanicals are distilled with the mezcal in a gin style, producing a hybrid herbaceous spirit.
