Sonora
Bacaonora is from Sonora, a northern Mexican state that’s bordered by Chihuahua, Sinaloa, and Baja. The Sonoran desert, which stretches into Arizona, is considered to be one of the most biodiverse in the world. Sonora’s mezcal was illegal for much of the twentieth century, and bacanoreros developed clandestine methods of production, including portable stills that could be operated in outdoor vinatas. The spirit recieved its own Denomination of Oirgin in 2000. According to the DO, legal bacanora can only be made from Bacanora is made primarily from A. angustifolia haw.
