Hidalgo
Hidalgo is located in central Mexico, bordered by San Luis Potosi, Veracruz, Puebla, Tlaxcala, Querétero, and the state of Mexico. Hidalgo was part of the state of México until 1869, when it was established as a separate state named in honour of the hero of independence, Miguel Hidalgo. It was once a primary producer of pulque, a fermented beverage made from the sap of the agave plant.
