Chihuahua

Chihuahua is the largest state in Mexico. Its northern and eastern border stretch across southern New Mexico and western Texas. Chihuahua is part of the Denomination of Origin for Sotol. Although Sotol is not a mezcal because it’s made from Dasylirion or “desert spoon” instead of agave, we cover it here because production methods are very similar to mezcal production and the two liquors can taste similar.
