Nose
Bright and fruity on the nose with peppers and a strong punch. At first, it reminds me of a high abv tequila from the Los Altos region of Jalisco. But then deeper notes of roasted meat, mint, and ripe tropical fruits make their way through. There is complexity, but it is subtle.
Taste
Light on the palate, but sharp and astringent with ripe fruits and spices in the first sip followed by a long, bitter dark chocolate finish. However, consecutive sips are much more vibrant, festive, and inviting. Definitely a nice mezcal to bring to a party!
Method/Background:
This artesanal mezcal is produced with the agave roasted in earth pits, milled with a tahona, fermented in wood tanks, distilled twice in copper pots and then a third time with local fruits, spices, chicken breast and produced only once a year as a way to celebrate the brand, their producers, families, friends, and is limited to no more than 500 liters.
