Nose
As I dig my nose into my glass, this mezcal just screams Espadin!! Notes of smoked pork, dark chocolate, and candied blueberries ooze from the glass, but I feel like I am standing above the earth pit and taking in all of the aromas from around the palenque!
Taste
While the body is cream, it is light in texture and intensity. Dry earth, charred agave, and roasted pork are most present in this mezcal and because it is not overly complex in flavors and is pretty soft on the palate, I would definitely recommend it for those who are just getting into mezcal and are looking for something different but “smokey”,
Method/Background
When Los Siete Misterios launched, they focused on ancestral mezcales from Sola de Vega, OAX produced with agave cooked in earthen pits, mashed by hand, fermented in wood tanks and distilled in clay pots. The Espadin was their first expression and always a classic.
