Nose
With a ton of dry earth, spice, and overly ripe tropical fruits, I’m really digging the nose on this mezcal. And that is just scratching the surface; I could spend hours just smelling this amazingness!
Taste
The texture is soft, thin and dry with some unsweetened dark chocolate, a touch of Oaxaca chocolate, and a touch of fruit. This is super easy on the palate and not as complex as the nose. This would be amazing in a cocktail with espresso and horchata: hot or cold.
Method/Background
Barril is a colloquial name for a variety of agave Karwinskii which is thick like a barrel and this mezcal is produced in the town of Sola de Vega using ancestral methods of cooking the agave in earthen pits, mashing by hand, fermenting in wood tanks and distilled in clay pots.
