Nose
Incredibly mysterious, deep and dense aromas of wet leather and clay.
Taste
Summons up images of an arid plane. It has a lactic charge with flavors of dried plums, borage, and wild dandelion.
Production Details

- Roast: Conical earthen oven lined with stone.
- Crush: Hand mashed in a canoe with an axe.
- Fermentation: In ground oak wood vats.
- Distillation: Double distilled in filipino still with copper pot and serpentine condenser.
Background Notes
This was made by the justifiably famous Gilberto Roldán who got that way by being a magician with the local cenizo and lamparillo and because he’s an enormous character.
