Nose
Like James Brown, this is funky!! Lots of lactic acidity with notes of heavy cheese and hints of earth, spice, and some overly ripe fruit. The interesting thing I find with Bacanoras is that they can express overly ripe tropical fruit even though they are produced in the desert with zero fruit for influence, and this one highlights that situation.
Taste
While the texture is thin on the palate, the flavor expresses everything I noted in the aroma. The finish brings a noticeable candied note, almost like Jolly Rogers apple, and continues to become sweeter. Delicious and complex without being overwhelming.
