Nose

Distinctively agave with a touch of sugar cane juice and cinnamon.

Taste

Wow, this is big, rich, full of cinnamon spice and that characteristic steamed tequilana flavor. Like many blue agave projects outside of the Tequila DO the La Paloma is in its own league, clearly an agave spirit but clearly an agave spirit with an identity all its own. You can tell that this is made by the same hand of the Opuntia, it embraces the maximum expression of the agave fruity flavors in that great body, but it also expresses the nuances of the agaves with a very different terroir.
