Background Notes
Ejutla is known for using a refrescadera still, which is a modified still that uses a single distillation run wherein the spirit is distilled 1.5 times. The characteristic style combined with the regional agaves that struggle to survive in the challenging terrain give way to complex and rich mezcals. Don Pablo Vasquez along with his family run their small production palenque, mainly working with Espadín, Barril and Mexicano. Tío Pablo’s infectious smile and joyous personality shine through in the bright character of his mezcals.
