Sotol
Sotol has its own Denominacion de Origen (DO) and is produced in Chihuahua, Coahuila, and Durango. It is made primarily with the Dasylirion Wheeleri or “desert spoon” plant. Because the DO is not internationally recognized, distillers in Texas and Arizona are able to label their bottles as Sotol.
