Rich with minerals and tea, the flavors match the silky texture. Flavors of baked plantain with luscious roasted orchard fruits add depth and ripeness, with heady floral overtones. It is powerful and concentrated, yet light and ethereal at the same time. The finish is zesty and mouthwatering.
Method/Background
Sola de Vega is well known for producing high quality agave; comparable to DOCG or Grand Cru status in wine. Tio Rey lives on a longtime family ranch where he has been intergenerationally cultivating a variety of agave species, along with other plants. He is known for his ensambles, which vary widely from batch to batch. The one thing they have in common is that they are always superbly delicious. Local agave is cooked in an in-ground earthen pit, hand crushed, naturally fermented, and distilled in small clay stills. The batches are small, making it extra exciting.
