Nose
Floral and heady. Notes of mashed banana, raspberry, and watermelon rind are fruity and fresh.
Taste
Sweet tropical fruit is almost overripe as it envelops the palate in a plush blanket of cherimoya, platano maduro, and other custard-like flavors. A dusty smoke quality refreshes the palate as notes of bright red chilies add a layer of gentle spice, and a hint of cherry blossom on the finish.
Method/Background
Fruta madura
Made from very mature wild agaves with a few months of capon, contributing to the underlying sweetness and ripe flavor profile. Agaves are cooked in an in-ground pit using river rocks and driftwood. Agaves are crushed using a tahona and open air fermented with local spring water and wild yeasts in wooden tanks. After fermentation it is double distilled in small copper pot stills.
