Nose
Distinct notes of green bell peppers and spicy serrano chiles are perfumed and lovely, with slight fruity undertones.
Taste
Continuing from the palate, herbal and vegetal notes are strong in the mouth, notes of poblano and jalapeno are robust with pleasant tongue tingling spice, supported by light smoke. The minerals round out the flavors, supporting notes of cilantro and orange zest. Pair this with smoked meats or fruity BBQ sauces.
Method/Background
Agaves are cooked in a steel, steam powered oven, pressed to extract the juice in an old style of crusher, fermented in in-ground concrete tanks, and distilled in a custom built copper pot still.
