Background Notes
This Mexicat is made of Maximiliana which is widely used in Raicilla but the Mexicat Masparillo comes from Zacatecas which is north east of Jalisco. While Zacatecas is definitely in the same continuum as Jalisco, it shares plenty of blue agave plantings and hacienda style distilling common in tequila, it’s also one of the states where mining was king during the Spanish occupation and hence where mezcal first really emerged as a Mexican spirit so it’s fascinating to see this sort of spirit being produced there now.
