Nose
Milk chocolate, cilantro, celery.
Taste
Tart, like mineral water without the effervescence. The midpalate hides some smoked tropical fruit, olive brine, and coffee, but you have to dig for it. The finish is dry and citrusy, with just a touch of spice.
Method/Background
Made in compliance with artesanal production methods, agaves are cooked in stone lined in-ground ovens, tahona crushed, open air fermented with ambient yeasts, and double distilled in copper pot stills.
