Method/Background
The family is invested in continuous sustainable reforestation of the variety, though this expression is currently made from wild agaves around 25 years old that grow 1800 meters above sea level. Agaves are cooked in a traditional earthen oven before being crushed with a tahona. The mash is wild yeast fermented in wooden vats before being distilled twice in copper pot stills.
