Nose
The fresh herbal and pineapple kissed aromas immediately invokes a traditional Oaxacan palenque. There is a creamy note lingering just underneath the surface, with notes of wet clay, citrus, and crisp forest air.
Taste
The flavors are layers with citrus, cherry, almond, and moss as it hits the palate. A gentle and consistent spice rolls over the tongue creating a velvety blanket of texture. Woodsy flavors and apricot pit characterize the finish along with warm baking spices that linger on the finish.
Method/Background
This mezcal is made from cultivated agaves, roughly 14 years old. Madrecuishe is a particularly round version of the karwinskii family. Agaves are cooked in a traditional earthen oven before being crushed with a tahona. The mash is wild yeast fermented in wooden vats before being distilled twice in copper pot stills.
