Nose
Sweet earth, melon, pea shoots, and under ripe peaches create a melange of aromas that keep the nose intrigued. There is something opulent about the aroma, creating a feeling or freshness even before taking the first sip.
Taste
The minerality of this mezcal is front and center, taking it’s time to unfold all of the layers on the palate. What starts out as bright and tangy turns to roasted and creamy, with notes of poblano rajas, fresh cream, and lightly toasted hazelnuts. Each sip reveals a new layer of flavor to enjoy.
Method/Background
The wild agaves come from San Baltazar Guelavila and Matatlan, and are roughly 12 years old. Agaves are cooked in a traditional earthen oven before being crushed with a tahona. The mash is wild yeast fermented in wooden vats before being distilled in ancestral style clay pot stills.
