Maestro Vinatero Margarito López Flores cooks the agave in a conical earthen oven, mashes the agave by hand with an axe and wooden mallet, ferments with wild yeast in river water, and double distills in an ancestral filipino still made of clay and Ayacahuite, with a copper condenser.
