This Rayo Seco Cenizo is produced by maestro vinatero Gilberto Roldan in Nombre de Dios, Durango. Wild-harvested maguey Cenizo might be the most common agave in Durango, but this ancestral agave spirit is anything but basic. Look for notes of Mexican hot chocolate, with peppery, sweet, and buttery notes hitting all at once.
