Nuestra Soledad San Baltazar is made with agave Espadin that is cultivated in the highlands, where strains of Espadin have been grown for over 100 years. Don Gregoio’s Espadin grows at about 5,500 feet in limestone-heavy soil. The concentration of sugars in his agave result in a refined Espadin with great character. This is a rich and full Mezcal that stays long on the palate.
