Distilled by one of the few maestra mezcaleras, Doña Teresa Rubio Murillo, the Miel de Tierra joven is another in that in-between category of officially a mezcal but historically a tequila because it comes from the historical zone of tequila production and is made from Agave tequilana Weber. The production follows that history into contemporary tequila production, the agaves are roasted in an autoclave, crushed mechanically, fermented in stainless steel with Saccharomyces Cerevisiae, and distilled in a copper alembique.
