Cómplice Ensamble is produced using Agave angustifolia (Maguey Espadín) and Agave karwinskii (Maguey Cuishe) by Mezcalero Ignacio Martínez in San Dionisio Ocotepec, Oaxaca. After the agaves reach maturity after approximately 8 years and 15 years respectively they are harvested and cooked in a river-stone pit oven. The cooked agaves are crushed by a horse-drawn tahona. After fermenting in oak wood vats, it is double distilled in copper stills.
