El Buho Espadin Capon Mezcal is made exclusively from ‘capon’ agaves: agaves that were left in the ground to mature for an additional year after their quiotes were cut. This process is used to develop more complexity in the final product. This batch of 937 liters was made in December 2019 from 10 year old agaves.
