The Derrumbes line of mezcal was created to showcase the flavors and production styles of each region in the mezcal DO. Derrumbes Oaxaca Mezcal reflects that ethos with a little bit of a twist in the production. The fermentation is naturally aided by the addition of pulque from the agave Americana before wild yeasts complete the 72-hour process. It is also aged at least 60 days in glass.
