Nose
Aromas of cream, herbs, and mint are matte rather than shiny or sharp.
Taste
Minerals are front and center on the palate, showing notes of slate, river rock, and wet stone. A touch of spice is more of a texture than a flavor, meshing with the eucalyptus undertones. Flavors of herbs like tarragon and chervil, dried cilantro, and sweet almond are layered and complex.
Method/Background
Owned and operated by Zapotec maestro mezcalero Celestino Sernas, many of the mezcals are made from estate grown agaves. The artisanal production includes tahona crushing, open air fermentation with the fibers in wooden tanks, and a double distillation in copper pot stills.
