Nose
Fruity and floral aromas show red berries, wisteria, and green grapes.
Taste
The flavors are decidedly more roasted, with notes of coffee, cacao, caramel, and comal toasted chilies. The tension created between the sweet roasted flavors are fiery red chili notes creating layers of flavor in between, best drawn out by a chocolate pairing. The lightweight makes this easy to sip endlessly.
Method/Background
Owned and operated by Zapotec maestro mezcalero Celestino Sernas, many of the mezcals are made from estate grown agaves. The artisanal production includes tahona crushing, open air fermentation with the fibers in wooden tanks, and a double distillation in copper pot stills.
