Nose
Green plantain, granny smith apple, and fresh summer herbs are bright and fresh. There is something cooling and refreshing noticeable just from the aromas.
Taste
The flavors are similarly crisp, showing cucumber, green bell pepper, and white flowers. It is soft on the palate, allowing the flavors to permeate deeply. Waves of green fruits with a hint of pepperiness continue to expand with each exhale after a sip.
Method/Background
Owned and operated by Zapotec maestro mezcalero Celestino Sernas, many of the mezcals are made from estate grown agaves. The artisanal production includes tahona crushing, open air fermentation with the fibers in wooden tanks, and a double distillation in copper pot stills.
