Nose
Notes of punchy lemon zest, earthy lemon balm, and sweet melon fill the nose. There is a hint of spiciness, like white pepper, creating angular and sturdy aromas.
Taste
The flavors begin with a burst of fruitiness, almost like candy, but without any of the cloying sweetness. Notes of white peach and moscato wine are playful and cheery. The texture is velvety soft throughout.
Method/Background
Owned and operated by Zapotec maestro mezcalero Celestino Sernas, many of the mezcals are made from estate grown agaves. The artisanal production includes tahona crushing, open air fermentation with the fibers in wooden tanks, and a double distillation in copper pot stills. This mezcal is distilled with lemongrass in the final distillation.
