Nose
Vivid aromas of dried apple, wet cardboard, and almonds.
Taste
Very restrained and subtle. A continuation of the nose with flavors of dried apples, almonds, and dried plums with a fleeting touch of rosemary to highlight it all.
Production Details
- Agave sources: Wild harvested
- Roast: Conical earthen oven lined with stone.
- Crush: Hand chopped with an axe and crushed with wooden mallets.
- Fermentation: In ground oak wood vats.
- Distillation: Double distilled in filipino still with copper pot and serpentine condenser.
Background Notes
Everything Roldán touches seems to turn to gold, including this sotol.
