Nose
A dynamic contrast of dried sage and dried porcini with fruity plum and bubblegum.
Taste
This is an incredibly lean Durango mezcal. It’s light on the palate, with lactic touches but balanced with bright green plums and jalapeño and a measured touch of sweetness.
Production Details
- Agave sources: Harvested wild
- Roast: Conical earthen oven lined with stone.
- Crush: Hand chopped with an axe.
- Fermentation: In ground oak wood vats.
- Distillation: Double distilled in filipino still with copper pot and serpentine condenser.
Background Notes
Gilberto Roldan produces mezcal for several brands including La Remilgosa (the picky one) and Rayo Seco, both of whom buy select, small batch productions. Tasting his distillates side-by-side makes for a great contrast. He also made the Rayo Seco Travesia Cenizo using the same exact equipment and techniques–so these bottles allow you to experience Gilberto Roldán’s distilling vision applied to different agaves.
The importer Las Chingonas notes that “Maguey verde is quite fibrous, sometimes leaving behind tiny floating pieces of agave fiber in the mezcal, even after an additional filtration process is performed. It also has a much lower sugar content, requiring more than 3 times as many kilos of agave per liter of mezcal produced compared to the cupreata, sacatoro or cenizo.”
