Nose
The cooked aromas come first with notes of smoked honey and roasted sweet tomato, followed by a bouquet of lilies, and finishes with a hint of peppercorn spice and all the freshness of freshly peeled cucumber.
Taste
The first striking notes are of ripe fruit sugars and the rich viscosity, combining to make what can only be described as a heavenly elixir. Within the layers of flavor there is the sweetness of sugar snap peas and juicy pears, grapefruit zestiness and minerals, and a long finish with red chili and ginger spice that blankets the tongue.
Method/Background
Made from Tepeztate between 16-25 years old, this mezcal is crafted in the traditional artisanal method. Cooking takes place in an in-ground oven with river rocks before being milked with a stone tahona, followed by fermentation in wooden tanks, and finally double distillation in copper pot stills.
