How do you define mezcal?

Mezcal PhD has a piece up that has added fuel to the fire of an ongoing argument over how you define mezcal. This is his response to the piece by Mezonte that came out during this year’s Tales of the Cocktail in New Orleans. The crux of the argument is whether there’s a way to define and differentiate traditional and artisanal mezcal, and if it matters. We’ll be back with more substantial thoughts later but for now just wanted to point out a heated debate going on with the world of mezcal.
