Nose
Carne asada on the grill, lactic fermentation, fresh apple juice, touch of orange. This is all over the place in the best possible way.
Taste
Mini-supernova in your mouth: Waves of fresh fruity peppers, pink peppercorn, a bite of fino sherry, and numbing Szechuan peppercorns. This is the sort of Sotol that would make Fox Mulder believe in Sotol.
Production Details
- Crush: Hand crushed
- Fermentation: Wooden tubs 6-10 days depending on ambient temperature.
- Distillation: “2-inch clay-lined stainless steel pot with a copper top. During second distillation, Sotol remains 2 weeks inside the alembic before being distilled.”
Background Notes
Named after the ‘dry war’ or prohibition that drove the Sotol – and much of traditional spirits production in all of Mexico – underground until relatively recently.
