Nose
The aromas are light and bright, reminiscent of pineapple juice and roasted agave.
Taste
A bit of earthy dustiness and limestone minerality provide nice textural contrast to the overwhelmingly smooth feeling that envelopes the palate. Refreshing fruits like cactus pear, dragonfruit, cucumber, and starfruit are mildly sweet, with a spicy backbone for piquancy. An easy drinking mezcal that features the delicate side of agave.

Method / Background Notes
As a chemical engineer Enrique is able to blend tradition with science to incorporate the best of both worlds. He created a Tequila-esque slow cooking steam powered radiant heat oven to cook this estate grown agave to allow the pure agave flavor to take center stage. This expression is the favorite of Enrique’s wife, Georgina.
