Nose
Incredibly floral and bright with rich aromas of roses and wet leather.
Taste
This is such a nice expression of an espadín and yet another bottle that gives the lie to idea that espadín can’t be expressive on its own. Clearly José Alberto Pablo knows how to coax amazing mezcals from it. It has a very light body with flavors of leather, banana, and clove.
Production Details
- Agave sources: 8-10 year old agave cultivated in Sola de Vega.
- Roast: Five days in stone lined underground oven.
- Crush: Hand milled in a wood canoa with mazos.
- Fermentation: 3-5 days in clay pots.
- Distillation: Twice distilled in clay pots.
