Nose
Intense spices that are almost mole-like in complexity show notes of toasted red chile, cinnamon basil and wet cement.
Taste
The rich texture is oily and smooth, allowing the winter spiced and menthol kissed flavors to expand over the entire palate. A fresh finish with melon and herbs keeps it bright and endlessly sippable.
Method/Background
Produced traditionally with in-ground stone horno, wild open air fermentation, tahona, and copper pot distillation at the family palenque in Santiago Matatlan. Agaves were sourced from Santa Maria Zoquitlan. Notoriously low yielding and difficult to distill, this batch of 738 liters from April 2018 was distilled 4 times and aged 8 months in stainless steel.
