Taste
The texture starts out soft, gently coating the palate with tropical fruit flavors before peppery green spiciness kicks in, adding depth and complexity. A touch of smoke rounds out the flavor without overpowering the agave core.
Method/Background
The flagship mezcal of the brand, this traditionally produces mezcal includes a 7 day cook in underground stone lined horno, 10 day fermentation in pine vats with wild yeasts, horse drawn tahona crush, and double distillation in copper pot stills. Batch sizes are approximately 5,000 liters, produced 2-4 times per year.
