Nose
The nose is full of deep grassy aromas with spices like white pepper peeking through.
Taste
Full flavored in the mouth with more herbal grassiness, deep spice, dried apricot and a touch of wet earth funkiness, it opens up significantly with each sip. A hint of caramel and unsweetened bakers chocolate on the finish are the cherry on top.
Method/Background
Produced traditionally with in-ground stone horno, wild open air fermentation, tahona, and copper pot distillation at the family palenque in Santiago Matatlan. Agaves were sourced from San Pablo Huixtepec. This batch of 1,297 liters from 2016 was aged 12 months in stainless steel.
