Nose
Peppery aromas are balanced by candied berry flavors-like blue raspberry and sherbet, with a hint of cool steel.
Taste
Equally balanced in the mouth, this mezcal is spicy up front with black pepper and green chili spice that stays on the tongue and soft palate, no heat in the throat. As it evolves notes of mixed citrus and smoked cinnamon emerge. An invigorating and tasty tobala.
Method/Background
Produced by local legend Epigmenio, now in his 90’s, with the help of his son Diego and family, this mezcal is made according to traditional and artisanal practices including cooking in an in-ground stone lined pit, tahona crushing, and open air fermentation in wooden tanks. The mash is double distilled in small copper pot stills.
