Notes of apples, pears, and violets are fresh and pretty.
Taste
Perfumed with floral notes through and through, the flavors of spring and summer fruits like blueberries, peaches, and plums are deep and robust. The mature flavors are elegant and rich, making this an indulgent spirit to sip on its own, or an ideal pairing for other rich dishes- luscious cheese, dark chocolate mousse, or fragrant meat stews. Yum.
Method/Background
Produced by local legend Epigmenio, now in his 90’s, with the help of his son Diego and family, this mezcal is made according to traditional and artisanal practices including cooking in an in-ground stone lined pit, tahona crushing, and open air fermentation in wooden tanks. The mash is double distilled in small copper pot stills.
